[Scene Graph] Material Overrides on prefabs work inconsistently

Summary

When overriding materials on a prefab within a scene, the materials do not display correctly within the edit session. Occasionally they will also revert to their default material upon editor restart.

We are using One File Per Entity - not sure if this affects the issue.

Steps to Reproduce

Create a prefab with a mesh_component and custom material.

Expected Result

Add this prefab to a level. Override the material with a new custom material.

Observed Result

Material renders black within the edit session.

Platform(s)

I raised a bunch of posts about prefab stuff they are all resetting.

I believe these are being looks at tho so they might fix this as part of it unsure if its related but sounds somewhat.

FORT-1001825 has been created and its status is ‘Unconfirmed’. This is now in a queue to be reproduced and confirmed.
