I’m using version 5.5.3 but there are so many assets that I shouldn’t download and try to write them. Which version would be good? 5.0.3 would be good?

Downgrading to version 5.0.3 from 5.5.3 may make it simple by cutting off unwanted assets, but do consider the following:
Compatibility: Check other features or tools still continue to be compatible with version 5.0.3.
New Features: Check if features in version 5.5.3 are essential to your project.
Performance: More recent versions may be more performant
If simplicity is desired and newer features are not necessary, 5.0.3 might be a better bet
