I don’t have a MacBook Pro M5, but I did some research and found a few things that might help resolve the issue.
One of the most common solutions, and the one that worked for many users, is exactly what you already did: disabling the “UDP Messaging” plugin. In addition to that, you could also try disabling the Telemetry plugin, as some users reported improvements after doing so.
Another thing you could try is adjusting the Editor Scalability Settings, as this has helped improve editor stability in some cases.

I think this is what you’re looking for to change the graphics , select the option that says “Performance and scalability tools tied to this viewport” and then go to Viewport Scalability. There you can change the graphics for your engine,(this is in Unreal Engine 5.6),

If you’re using an older version of Unreal, it appears at the top right under Settings , Engine Scalability Settings.

You could also try verifying the project or running it as an administrator. It might be worth a try, as it has helped in some cases.

I’m having a massive Unreal Engine startup failure on Apple Silicon.
System:
MacBook with Apple M5
macOS 26.4.1
Unreal Engine 5.6.1 and 5.7.4
Installed through Epic Games Launcher
Issue:
Unreal Editor fails during startup.
Through Epic Launcher, the editor usually stops around 4–10%.
After disabling a massive amount of everything, I got it to reache ~35% before freezing. This happened only once, was not able to reproduce.
The issue happens in both UE 5.6 and 5.7.
