Ok, I have an answer thanks to the Unreal Discord community, the issues have to do with the importing of the “SM_Crate.FBX” The tutorial does not go into detail on how to import this file as there are some nuances that are not explained in the tutorial.
Make sure when importing the file that Vertex Color Import Option dropped down box is set to Replace As the default is set to ignore.
