Oculus documentation says to use UE fork from Oculus because it is well optimized for VR. Do you use it for development purposes or only for the final build? What about dedicated servers for VR multiplayer games, where do you build them?

I use open xr and I’ve pkgd a dozen things onto my quest already from the main version of UE 4.27 and now 5.03
I don’t think you need to look for an oculous fork.
for multiplayer there are a few templates
the base vr template in unreal has mp support
there is also the VR expansion plugin
and there is a template called vrmp-2
