Is it possible to switch engines for a multiplayer or offline video game after it has been released? For example, switching from Unity to a Unreal engine in an update for that game. Would something like that be possible?

Technically it’s possible, but you would have to develop the game in both engines, and the update would basically be a totally new game. The only thing remaining from before would be the save game data.
