I’d turn the sun down still. Quite often people have another directional light for the moon, much dimmer and bluey white.
Having also spent the best part of two weeks trying to get an indoor cave scene with some bright spots to look right, I’d recommend surrounding the area with a post process with auto exposure turned off ( min and max EV set to 0 ), and tweak the exposure compensation to get the levels right.
It is possible to exclude the torches from you PP. But I wouldn’t recommend it, as they will have a strange sort of ‘cut out’ / pixely edge to them if you do that.
