Help needed with tricky half translucent material

Hi,

I’m currently trying to make candied fruits in Unreal like in the reference images.

I tried looking for somewhat clear ice and water tutorials and what not to start off but I haven’t been successful so far in creating anything decent.
Does anyone have suggestions or clues as to what to do?

Try using sub surface scattering, like what skin shaders use.
