It is definitely possible. There are plugins that can already do this on the marketplace like:

I had this same question a few years ago for a research project. There was an Unreal user who did a tutorial for how to code a C++ plugin to output CSV. It wasn’t too hard: [Unreal Engine 4 Good to Know - Read and Write Text File] Also I think Rama’s Victory plug-in would work - but I also needed a Mac compile. Hope this helps!
