Blood & Gore using broken-down models or "holes"? Need help with starting point.

I’ve been doing research on how blood and gore are done in video games. I hope this is the right forum discussion to post this since this. I’m making a game starting with Unreal Engine 4.18+, it’s a low-poly game similar to an old late 90s PC game like Quake 2 or Unreal Tournament GOTY. So each character in this game will have 1000-1500 triangles polys.

I have been looking at games like Soldier of Fortune 2 and Wolfenstein 2: The New Colossus. I need help getting a starting point and method of getting intense blood & gore for my characters before I start modeling and rigging the characters, so I know how to model the characters for the gore guidelines, etc. I have done some research on how Soldier of Fortune gore was done, it was done by having each character model be broken into chunks and put together with a rig, so when you keep shooting the body, it will keep deteriorating (added YouTube video link below for example of what kind of gore I want). Wolfenstein 2 had it similar to how Leaf 4 Dead 2 was done using decals and holes to fill out the cut which I have no clue where to start for that.

I don’t want to completely copy the blood and gore of Soldier of Fortune 2, I would like something bloodier, realistic, and “explosive”. A bit more exaggerated like Mortal Kombat or Brutal Doom Mod. I basically want a combination of both Soldier of Fortune 2 and Wolfenstein 2 (sort of).

My game has mostly melee weapons and a few guns. I also want the type of body damage and gore to be dependent on what weapon was used (sword, baseball bat, chainsaw, shotgun, handgun, etc).

Any help and tips for a starting point of how I should do it would help me greatly in this discussion. I will reply as quickly as I can to your replies. Also, if anyone is wondering, my software I am using alongside with UE4 is Maya LT 2018, Photoshop CC, and Substance Painter 2.
