Hi,
I want to reinstall Epic Games Launcher and move it to another drive. Will this affect my unreal engine, projects and marketplace assets that I’ve downloaded?

Deleting the launcher should not remove or uninstall unreal, projects or marketplace assets.
In the Launcher go to Settings → Edit Valt Cache Location to find out where it’s saving any marketplace assets that were downloaded. Set a new launcher to this same location.
