I’d recommend going with Unreal Engine 4.27. It’s a solid version that works well on most machines.
Given the specs of your laptop , it might struggle a bit with Unreal Engine 5. You could try using Unreal Engine 5 but disable some fancy stuff like Lumen and set the graphics settings to medium. However, to play it safe, I think sticking with Unreal Engine 4.27 and using medium settings in the engine would be your best bet.
