Check out the Content Examples and the Destructibles.umap as there are several methods by which you can destroy objects including what you are looking for.
The setting you are looking for is in your Destructible Mesh’s editor in the “Chunk Parameters” window. From there you can designate chucks to not be affected by destruction. I hope this helps!
