When i Right click or open a menu, the rectangle that the menu is supposed to be contained in is replaced with a screen sample of the top left of the screen. Please could someone help me?

That’s a strange glitch you are encountering, my first guess would be a display drivers conflict. Try refreshing them, and pick the “Clean Installation” option, as well as going for the “Developer” drivers.
Alternatively, there was a similar issue in another thread, and it was related to one of the common GPU overlays, either nVidia Experience, or the Xbox Game Bar. Try disabling either (or both), then restart UE.
