What would I need to do to be an ideal employee at a graduate/entry level position in game design?
Would I be a suitable employee if I had a level 2 IT qualification?

You need to exhibit difference and ingenuity in game design. Whether that be in coding, level design and concept, or artwork.

Basically, make a good noise on the game scene.

At least 30 years of experience in the field, with 5 or more AAA released titles.

Edit: and no personal life at all.

A level 2 IT qualification, and a desire to design games. What else would it require?

How about knowing Unreal Engine, CryEngine, FrostBite Engine, a bit of Godot, at least half of Unity, C++, C#, Java, Javascript, Python, js.react, js.angular, jQuery, HTML5, maybe Ajax, have played and beaten at least 40 Nintendo games, and received a D- in Intro to Psychology.
