I am a beginner with Unreal Engine 5 and game development in general, and the tutorials I watch keep mentioning “Alpha Channel”, but I cant find anything on the internet that explains what that is. What is it, and what is it used for?

The Alpha channel describes how transparent the pixel is - if the Alpha is 1.0, it is fully opaque (solid) and if it’s 0.0 it is completely transparent.
