Volumetric clouds from above

Hello,

My issue is with volumetric clouds and trying to create an areal scene with the aim of getting a nice render of a jet in the sky but form above. So far I have struggled to make it realistic in terms of cloud height in the atmosphere. I want to make it from the perspective of the camera looking down on the plane while its in the sky above the clouds. The issue I have with this is the clouds looking… flat. I cant get a natural feeling with small to medium clouds spread and scattered. When I try to look around I end up looping between the same few tutorials all or most with the focus on a render form above. It feels difficult because I get the impression it wasn’t made for areal views, even when I see people’s work whomst claim do it in unreal engine. I would like some help with this issue. Id rather not have all my clouds look like they are bound to a binary height in relation to each other.
