This might be a trivial materials question but its been beating me up for the better part of a day; How can I manipulate UVs to warp/skew a texture? For example a projector keystone adjustment. Any help is appreciated!

You could do something like this - you may want to play with the math a little to get it more linear, but the concept is something like:
If you make a material instance of that, it exposes the Horizontal and Vertical values for the keystone.
