You can remove the engine in the Epic Games Launcher:
The My Documents → Unreal Projects folder should hold your projects - you will need to remove those manually, most likely. And the launcher itself can be then removed in Apps & features (if you’re running Windows, that is):
Once this is all done, you may also want to check this location for any residues:
