Lately I’ve been having a heck of a time connecting to the Epic Servers, the error I get is “Unable to reach the Epic Servers at this time.”
I did have the “-http=wininet” on the icon originally but removed it to see what other errors would be produced. It seems something may have changed on our corporate network? Any help narrowing down the culprit is appreciated!

Try the troubleshooting steps in this section of the troubleshooting guide. If possible, also make the following exception on your firewall:
xmpp-service-prod.ol.epicgames.com port 5222
If nothing works, follow the steps here to generate your Debug Logs. Post them here, along with your Dxdiag/system specs.
