Can't seem to find any mention of this anywhere, any pointers would be really appreciated!

Just so you're aware, right now Twinmotion does not yet support M1/M2-based Mac machines or macOS Ventura, so issues like this might occur until we release support.
You should be able to fix UI issues like this by following the steps in the Twinmotion is not visible after splash screen article, which resets Twinmotion to a default configuration.
