Thinking about buying a new mac studio for twin motion but they all have M1 chip, I also read that “We do not recommend the use of M1, M1pro et M1max at this stage until we can fully support it.” So what’s the best mac to use? Or switch to windows?

For some additional context on this, at this time, Twinmotion does not natively support Apple's M-series silicon, which is why we do not recommend the use of these chips at this time. Previously, there were some stability issues on machines using this hardware, but recent releases of Twinmotion have become more stable on these machines and should run fine in the majority of cases. While Twinmotion won't be utilizing the native benefits of the M-series chips right now, you should still be able to use it with minimal, if any, issues. We are looking to natively support this hardware in future updates, but don't have a timeline on this yet.

If you want guaranteed stability, any of Apple's current computers using Intel processors are natively supported. So long as the machine meets the specs outlined in the Twinmotion System Requirements article.

One thing to consider when deciding between Windows and Mac is that the Path Tracer is only supported on Windows at this time, so if this feature is important to you, then you will need a Windows computer with a compatible raytracing-capable GPU.
