that was happening to me , i noticed it needed to update and that simply fixed it , Also you can open the project directly from the file explorer

you just need to drag the epic games launcher icon into the applications folder and then restart it, it should work cause i had the same issue and its solved now.
In case someone find this answer first (as I did) I’ll post answer form diff thread (the problem is on computers having Nvdiia card (might be any second card) + integrated Intel card on Windows 10)
I added in Settings (Win 10) → (type in search bar) Graphic settings → (choose version of .exe that shortcut is working on - mine was Win64- path) and option Power saving - Inter processor integrated card (Wasn’t working on Nvidia card - was still restarting like crazy)
