What happens if you cancel your subscription to speedtree. Do the trees you’ve created with it stop working or do you need to subscribe only to create trees.

No, the Speedtree software is only used for creating the trees, if you no longer pay for the software you can still use the files you’ve created with it, you just can’t edit them or create more.
That’s what the options are–buy the premade trees from their store, or pay for the software and make your own.

Normally I’d agree with you, but for Speedtree you’re not going to be using it long for a project and the pricing is very low.
I agree. I’ve been interested in using Speedtree for a while but I’m not at that stage yet. It does seem fair for what it offers. Apparently the subscription lets you access any from the store?
I might be wrong but I think the subscription does not let you access trees from the store freely.
AFAIK when you buy the license you get a handful of trees included, and then you get around 3 free trees every month while your subscription lasts (they decide which ones).
and that’s the part I’m struggling with. you need to buy trees from the store (or make your own, but if you have to create your own textures it defeats the purpose of using speedtree), and those trees don’t have good enough quality (you’ll have realized this, if you’ve tried the free trees they released when they made the UE4 integration).
so in the end one needs to buy(rent) the speedtree license, buy trees from the store, adapt them on speedtree, and then finally use them in UE4. a tedious and time consuming process, considering you’re paying for things every step of the way 
We considered subscribing to SpeedTree when there was no ready made trees available. What is available now though is ready made for UE4 with free packages available <wink wink> as well as low cost foliage produces that saves a lot of time over and above making a tree from scratch.
I like the Allegorithmic’s subscription model for all Pro-Products.
