Hello! I have been learning how to use verse over the last few weeks and I want to get even more familiar with it by making some simple small projects that help me understand Verse better and UEFN itself. I would highly appreciate some suggestions and thanks for reading!
If it were me, I would try to choose from the following:
Assuming you didn’t delve into these already. I learned some new techniques from some of these that I didn’t know UEFN and Fortnite Creative could do. I still have yet to go through all of them.

Also I would go through the examples that Epic has put in their docs as you can learn a LOT from them.
