"Realistic" / challenging Motorcycle Game

Hi there, I was wondering how hard it would be to create some kinda realistic feeling bike physics (e.g. Ride / Motogp / MxGP -ish, (basically Milestone Games style)?
I am aware that Milestone must have a real GameDev Team working on it to work it out to their level of perfection, but what I am aiming for is basically a Motorcycle Game that is a bit harder to master than what the „rideable bikes“ and other arcade style assets offer.
From observations I would guess what it needs is tyre grip and balance physics that don‘t keep you upright automatically.

Any comment is appreciated as I am not that experienced in GameDev, rather coming from the GameDesign section.
