Sadly I am facing pretty similar issues like you. Trying to package with the 5.1 Oculus Branch using Vulkan. Any advice on this matter would be a huge help.
**UPDATE
So after checking my logs I spotted that mobile occlusion mentioned a few times in related to the error with shader compilation. So I disabled it in my project, tried to rebuild and it worked!

Sure, so inside your Project Settings go to Platform → Android
and if you scroll down, under Build you will find the Vulkan settings.
It is also a reaquired step to update the Android NDK.
But if it is your first project for Quest 2 check on your rendering settings to make sure that they are correct for the Quest 2 also.
