You would likely want to create a custom NPC behavior using the navigatable interface as mentioned here: Create Custom NPC Behavior in Unreal Editor for Fortnite | Fortnite Documentation | Epic Developer Community
The new developer assistant may be able to help with creating the verse script for you, and likely you would want to ask it to chase the player target and then do some action such as apply damage to the player or create a game over if the NPC successfully reaches the player.
