Is their an Open World Demo Repo? I am on Linux, it can’t use the Unreal Marketplace, How do I get it? I only need the grass, Is their a Repo like thing, where I can get the specific asset I need.

You will have to download the entire project from the marketplace if you want to access the assets. The assets are then located within the projects Content folder.
As far as I know, there are no repositories for these projects available online.
I am on Linux there is no marketplace
