Hi, I used the offline installer to install a newer version of Unreal Engine in our computer labs for students and I am wondering if there is a way for the Epic Launcher to detect it and include it in it’s library?

As far as I’m aware, built-in, it does not do this. However, there is a workaround for games and I’m PRETTY sure since they are downloaded and stored in a similar manner (usually in the same folder, as well), this method might work. Give it a shot!
