A pretty good channel for Combat AI tutorials is Gorka Games on YouTube.
There’s a series he did with an Assassin’s creed-like tutorial. In there he did an entire video string on enemy AI. I think it’s a great place to get started.
If you want to start out simpler though, he has another one on a very simple combat system with an AI.
