When creating your UV sets for both texturing and lightmaps, some models are just too complex to get a good lightmap. It occured to me that it would be better if instead generating the uv map on one channel, that it would be more feasible to use more than one!
Channel 1: texture
Channel 2+: lightmap
In the object properties, you could add uv channels under the lightmapping properties. Sure, the more lightmap channels, the more it would impact performance and build times, but the trade off could be worth it in some cases.
