I’d like to share a basic engine tool that I’ve made for my own UE5 project:
The ‘Landscape Mesh Builder’ is a standalone Blueprint that uses the Geometry Script plugin to generate a series of mesh assets from a landscape (or imported) heightmap.
I’ve made it available for free on Fab (with instructions) for anyone that wants it:

The Blueprint’s reasonably well commented, so the tool should be easy enough to use / modify to your own needs.
