Is there a way to have sub categories under variable categories?

in c++ yes

UFUNCTION(Category=“MajorCategory|SubCategory”)

i think MajorCategory|SubCategory works for blueprint too but i havent checked

Turns out the way to do this is to have a straight vertical line directly after your created catagory. Mycategorie|Mysubcategorie

It is the key right under backspace (holding shift).
