Can I add more versions of the same project or more different unreal projects on the same IOS device with the same developer certificate?

Yes. You have to create a few AppIDs, generate different provisions files for those AppIDs. You can add your certificate to each provision and sign applications with those provisions. That allows you to keep all apps on one device at the same time

You can’t keep different versions of one game installed on the device but you can use TestFlight app to switch between the version of your game on the device without your mac or pc. However, all these versions should be uploaded to AppStoreConnect to be available in TestFlight.
