Need some help setting up an inventory system and some hp, mp, and xp progress bars. Any help would be much appreciated as I pretty much have no clue where to even start, the more detailed the better, thanks in advance.

Not sure what help you need, but there are a lot of detailed tutorials on YouTube for each of those things.
