I have my inputs for mouse/keyboard (for attacks/etc), but for input mapping what options in UE4 would I look for hitbox/stick inputs from the project settings > input tab?

Do yourself a favor and switch to the enhanced input system. It has vastly improved options for controlling player inputs.
You can use chorded actions, get input press, hold, release, input elapsed times and better axis mapping.
In 4.27 enhanced input is a plugin.
