you learn the node, what they do and what nodes there are through time and experience. the place that i started out was the unreal engine video tutorials which are now on their youtube channel. after learning the basics of the engine i would find other small tutorials that seemed interesting, make them, then tweak them to create something new. theres a ton of great channels on youtube many of which are made by names youll see here on the answerhub and forum. a few off the top of my head are nebula games, titanic games, dean ashford, and rats game.
