You can edit the HDRI used in videos by selecting the video you want to change the HDRI for, then selecting the Settings for the video's keyframes or parts. If you want to change the HDRI for a keyframe, select the More option under the keyframe to edit just that keyframe. If you want to edit the HDRI used across an entire video part, select the Settings option at the bottom of the Part in the Dock. You can then drag and drop the HDRI you want to use into the scene to replace the current one. To adjust HDRI settings, you can do so in the Lighting > Environment > More submenu.
When working with HDRIs in videos, any new keyframe or video part you create will use the prior HDRI selected, and you can make adjustments continue to create the video.
If you already created your video and want to adjust the HDRI after already having made several parts, you will have to do so for each part individually, and an HDRI cannot be applied to multiple parts at once at this time.
