We are using 3dsmax + Datasmith to import all the data to Unreal.
question:
If we made changes and edits inside of Unreal - how can we export the data from Unreal, so we can use the updates inside of 3dsmax?
Is there a way to do that using the Datasmith plugin?

lol what ur asking is not possible and logical. both softwares have there own purpose. what u have to do make changes in 3dsmax and reimport that mesh.
There is not a dedicated pipeline to export from Unreal back to 3dsMax.
If needed, you could export geometry as FBX, export textures and do a script/blueprint to export your scene transform to a text file.
