In 4.26, 4.27 a Game>Blank project created just a blank project with no scenery, but in UE5 it gives a whole mountain range behind the grid.
How to create without that?

You can create a new level in UE5, and here it is possible to select the “Basic” type, which does not include the mountains…
Note, that this level does not include world partition.
