Thank you for posting in the community with your question.

In order to create a camera and set a scene state you will first need to create a Scene state in the scene graph. You can reference this video here: https://youtu.be/LbzZH3N0X6w

Once that is set you can then create a media. In the more settings of each media you can then access the scene state under the camera settings > scene state and adjust it as needed,

In order to set the Presentation to Pedestrian mode, you have to press the M shortcut.

There currently isn't a way to automatically set it as a default but you can make a suggestion on the road-map for this:
