I recommend that you restart the animation using the Control Rig (see the video on the links) if you are not satisfied with the re-targeted

animation and want to improve it and use additional bones.

The FK rig included in the Blender project is for demonstration purposes only and is not intended for creating hand animations for Unreal Engine projects. It is designed to showcase the setup and to export to other game engines.

The UE5 Manny rig has its own unique bone hierarchy. To create animations for Unreal Engine, external tools are typically used (for example, Cascadeur — see the video linked).
