on the Avalanche project we were shown a possible organization with color codes in the outliner (see screenshot). I would like to know if it still exists and how to activate it. I searched online but I couldn’t find any leads that would give me the solution.

Hey there @Flingus83! Welcome back to the community! You’re looking for the Motion Design Outliner, which is a custom outliner specifically in motion design mode.
If you already have the Motion Design plugin active, you can change the mode to Motion Design, then select this Motion Design button. It enables the full suite and should create a motion design outliner in the process:

Unfortunately, I don’t have the Motion Design Outliner, even when I launch a new project directly in Motion Design mode. Surely there must be a shortcut key or a checkbox to activate it?

Looks like the outliner stopped appearing as a default in 5.7, very odd. You can still open it via the window dropdown:
