The answer for Xbox One is to uninstall Fortnite then install 31.40 correctly as described in post
(Solved) in 31.40 Creative Hub Bug (ITS BACK/PLS READ) - General / Issues and Bug Reporting - Epic Developer Community Forums (unrealengine.com)
This will then allow connection via UEFN to Xbox One but you must UNINSTALL old Fortnite version first
