is it possible to use IK animating to, for exemple, collide with lets says a bottle of water to have the hand perfectly around the item? And is there a video or documentation about this?

You ABSOLUTELY can use Inverse Kinematics with hands/arms… you can use it with any bones! I know IK is widely used mostly for legs, as most games can actively use that, but it works just as well with arms and hands!
There is a good bit of documentation and videos about this- but really once you truly understand IK and how it works it can be applied to any bones- even if you just learn leg IK really, really well.
I grabbed a video off of youtube for you, but don’t be afraid to search others out that may be better for you!
