I made a project with UE5EA. If I really want to do it, can I publish it as early access game in order to sell it on steam for today?

While tagged as Early Access, nothing is guaranteed to work with the same behavior (even visuals) when compared with a tagged Release version. That said, if you really do so, you will be on your own to maintain your project, which can be really troublesome as some fixes might be brought months later until next release even. Epic itself stress that we must not try to release projects in Preview, and as Early Access is even more subject to changes than Preview ones, I surely agree with them on this.
