bayer filter sensors

What is the influence of the Bayer filter that we have on most of the sensors we are using on the quality of the reconstruction ?
We know that these sensors reconstruct the missing colors by interpolation, so this may have an impact (at least in high/downscale 1).

Anyone has experience of alternatives ? (and comparison of the same subject taken with a bayer and another type of sensors) :
-Sigma foveon
-Fuji XTrans (another type of interpolation)
-Pentax Pixel shifting (4 pictures taken with a 1 pixel shift on a bayer sensor)

I would be quite surprised if there was an issue with the most common sensor…

But I would also be interested in the X-Trans, since I have my eyes on the X-T20.
