Basic flowchart animation total

Pardon me for doing it whole than step by step,
but basically i am trying to design an action rpg game like dissidia final fantasy.
It will include midair and ground actions, exchangeable button skills, combo system.

Before going into blueprint and pressing it all…
How should i list all the possible animations that will happen to it? Including different
behaviours of attacked and parrying…
For reference:

I simply don’t know where to start from.
And i am mostly and animator than a programmer.

I do know that it seems taking care of the animation first than the blueprint will save alot of testing so the action will be limited to the assets.

How should i best approach this?
The final product will simply be a demo of controllable animations of several characters…
