Is there a way to disable the editor from compiling shaders while dragging values? For instance, dragging a constant value is not so useful because the editor pauses for several seconds to compile the shader, before I have had a chance to arrive at my desired number. Maybe it could wait until click-release?

This is a known issue although there is currently no option to disable or delay the compiling. As a workaround, the workflow I suggest is typing the values directly into the field for Texture and Material properties.
